High Protein Cinnamon Crumb Coffee Cake

Does the thought of another stack of pancakes or bowl of oatmeal send you to yawnsville? Yeah, me too! That's why you need to check out my cinnamony-yummy high protein, gluten-free coffee cake! But here's the kicker - you don't have to drink coffee in order to enjoy it! ;) This recipe makes for a great breakfast or snack at any time of the day! I will warn you though, you're going to feel guilty when you eat it because it's SO good you won't believe it's good for you!

Enough of the chit-chat, let's get that recipe!

HIGH PROTEIN CINNAMON CRUMB COFFEE CAKE

Makes 12 servings. Calories per serving: 94 calories; Protein: 7.8g; Carbs: 12.6g; Fat 1.2g

INGREDIENTS:

In a large bowl combine:

In a medium bowl combine:

  • 2 egg whites

  • 1 cup vanilla unsweetened almond or coconut milk (for added protein use Fairlife or Organic Valley Fat Free milk)

  • 4oz. Greek yogurt (or 1 small container of unsweetened apple sauce)

In a small bowl combine and set aside:

  • 1/3 cup of Monk Fruit Sweetener or Stevia

  • 2 tsp cinnamon

  • 1/4 cup oats

Optional icing:

1/4 cup of powdered sugar (To stay on the healthy side, use a monkfruit version or Swerve brand blend)

1 tsp vanilla

1 TBS unsweetened vanilla coconut or almond milk or organic fat free milk

DIRECTIONS:

  1. Preheat oven to 350˚.

  2. Spray an 8x8 Pyrex dish with non-stick spray.

  3. Add the wet ingredients (medium bowl) into the dry ingredients (large bowl) and combine until mixed well, making sure not to stir too much.

  4. Pour 1/2 of the batter into the dish.

  5. Sprinkle 1/2 of the cinnamon/sugar mixture in the small bowl on the layer.

  6. Pour the remaining batter into the dish and cover with the remaining cinnamon and sugar mixture.

  7. Take a knife and swirl it through the batter to create a marbled affect.

  8. Bake for 25 to 30 minutes or until a toothpick comes out clean.

  9. Allow to cool for 10 minutes and then drizzle on the icing (optional).

  10. Store in an airtight container for 7 days. Best when heated!
