HIGH PROTEIN CINNAMON CRUMB COFFEE CAKE
Makes 12 servings. Calories per serving: 94 calories; Protein: 7.8g; Carbs: 12.6g; Fat 1.2g
In a large bowl combine:
1 1/2 cups oat flour
2 scoops vanilla protein powder
1 TBS baking powder
1/3 cup Monk Fruit Sweetener or Stevia (I prefer Monk Fruit)
Pinch of salt
In a medium bowl combine:
2 egg whites
1 cup vanilla unsweetened almond or coconut milk (for added protein use Fairlife or Organic Valley Fat Free milk)
4oz. Greek yogurt (or 1 small container of unsweetened apple sauce)
In a small bowl combine and set aside:
1/3 cup of Monk Fruit Sweetener or Stevia
2 tsp cinnamon
1/4 cup oats
1 tsp vanilla
1 TBS unsweetened vanilla coconut or almond milk or organic fat free milk
Preheat oven to 350˚.
Spray an 8x8 Pyrex dish with non-stick spray.
Add the wet ingredients (medium bowl) into the dry ingredients (large bowl) and combine until mixed well, making sure not to stir too much.
Pour 1/2 of the batter into the dish.
Sprinkle 1/2 of the cinnamon/sugar mixture in the small bowl on the layer.
Pour the remaining batter into the dish and cover with the remaining cinnamon and sugar mixture.
Take a knife and swirl it through the batter to create a marbled affect.
Bake for 25 to 30 minutes or until a toothpick comes out clean.
Allow to cool for 10 minutes and then drizzle on the icing (optional).
Store in an airtight container for 7 days. Best when heated!
