Meal Prep Protein Pancakes

Nothing starts a morning off better than some warm and tasty protein pancakes! Even better, one batch of these will leave you with almost two weeks worth of breakfast!

VANILLA PROTEIN PANCAKES
 
Makes 24 pancakes; 1 serving equals 2 pancakes (women); 4 pancakes (men)


 
INGREDIENTS
 

 
4 Tbs. Stevia
 

 
3 Cups of Oat Flour (Bob’s Red Mill is a great one)
 

 
3 Scoops of Vanilla Protein Powder
 

 
2 tsp. Baking Powder
 

 
3/4 tsp. Baking Soda
 

 
1/2 tsp. Sea Salt
 

 
1 Tbs. Ground Cinnamon
 

 
2 1/2 Cups of Unsweetened Vanilla Almond Milk
 

 
6oz. Greek Yogurt
 

 
1 tsp. Vanilla Extract
 

 
3 Egg Whites
 

 
4oz. Container of Unsweetened Applesauce


 
DIRECTIONS:
 

 
In a large bowl mix all the dry ingredients until well combined, make sure to try
 

 
and break up the clumps of oat flour. In a medium bowl, whisk the wet ingredients
 

 
together and add to the dry ingredients. Stir until well combined. Use a 1/4
 

 
measuring cup to pour each pancake onto the griddle. If using and electric
 

 
griddle, preheat it to 350 degrees.
 

 
To store in the freezer, separate each pancake between a sheet of waxed paper
 

 
and place in a freezer bag. When ready to eat, remove the pancakes and
 

 
microwave for 45 to 60 seconds.
