SUMMER FIESTA SALAD!



When temperatures are soaring, the last thing you want is something heavy sitting in your stomach weighing you down! My Summer Fiesta Salad is like a party in your mouth and an amazing way to cool you off! Have this refreshing salad alone as a snack or with some grilled chicken breast or fish to make it a complete meal!

INGREDIENTS

1 cup sliced strawberries

1 cup watermelon

1 bell pepper, diced

1/2 cucumber, sliced

1 tsp olive oil

1/2 tsp cinnamon

Cilantro

Salt and pepper to taste

Lemon & Lime juice

1oz. fresh mozzarella, feta or goat cheese

OPTIONAL KICK: 1 jalapeno, diced and seeds removed

DIRECTIONS:

Combine strawberries, watermelon, cucumbers, bell pepper and cheese in a bowl. Squeeze the juice from the lemon and lime over everything. Add olive oil, cinnamon, cilantro, salt and pepper and mix well. Enjoy!
