Warm Up Your Insides with My Easy, Healthy Creamy Chicken Stew!

Winter is the perfect season to indulge in cozy dishes that not only taste delicious but also nourish your body. One such dish is a creamy chicken stew made effortlessly in a crockpot. This recipe is not only gluten-free and high in protein, but it's also a meal that the entire family will enjoy.
If you have followed me over the years, you know I love a good crockpot meal! As a #bossbabe without a lot of spare time on her hands, I don't have hours to meal prep each week, and crockpot meals are generally my main go-to! They allow you to prepare meals with minimal effort while filling your home with all the yummy smells that are certain to make your bellies grumble! This creamy chicken stew is the epitome of comfort food, combining tender chicken, wholesome vegetables, and a rich, creamy broth. Bonus: it's healthy for you!

Ingredients:
1 package of boneless, skinless chicken breasts, leave whole as we will be shredding it later (I love Belle Evans chicken breasts, they usually come 3 8oz. breasts to a pacakge)
2 32oz. containers of chicken bone broth
1/2 cup of milk of choice (I used fat free Fairlife)
3 carrots, sliced
3 celery stalks, chopped
1 onion, diced
1 heaping TBS of minced garlic
1 tsp. each of oregano, salt, pepper and Tony Chachere's Creole Seasoning
1 TBS worcestershire sauce
1 TBS olive oil
1lb small golden potatoes (I used a bag of Alexia frozen olive oil and sea salt potatoes since it's what I had in the freezer!)
1/3 cup of gluten free all purpose flour
Instructions:
Line your crockpot with a liner bag - these things are lifesavers!
Add in the chicken (frozen or thawed).
Pour in the chicken bone broth and add in veggies, spices, olive oil and worcestershire sauce. We will be adding the milk and flour near the end.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
About 30 minutes before serving, remove the chicken and shred it and add back to the crockpot. mix the cornstarch with water and stir it into the stew to thicken the broth.
Remove 1/2 cup of broth and place in a separate bowl. Mix with the flour and milk with a whisk. Once mixed, add back to the crockpot and stir well and let cook for the remaining 30 minutes to allow the stew to thicken.
Serve hot, and add more salt if desired!
