Step aside gluten. I'm introducing a delicious cheddar biscuit recipe that is so tasty you won't even realize it's gluten free!
Gluten free baked goods have had a negative reputation over time for being bland and dense. I have been on a mission to continue experimenting with recreating popular baked items to ensure they are as delicious, if not more, than their gluten-containing counterparts, while also making them a healthier option!
Did you know that the average fast-food sausage and egg biscuit can bring in a whopping 500 calories? Here are some macro comparisons:

With that, I bring you my gluten free cheddar biscuit recipe!
INGREDIENTS
2 Cups All Purpose Gluten Free Flour (I used King Arthur Measure For Measure GF Flour) *Note: if you use a different brand, check if it contains xanthan gum, if not, add 1 tsp to your recipe.
1/4 Cup (36g) corn starch
1 TBS baking powder
1/2 tsp salt
1 tsp garlic powder
6oz. shredded mild cheddar cheese
8 TBS unsalted, cold and shredded/diced butter (for my recipe, I used Ghee due to it's low lactose)
1 cup (8oz.) plain Kefir
3 TBS heavy whipping cream (If you'd prefer a non-milk product, or do not have whipping cream on hand, you can also use an egg wash - whisk 1 egg with 1 tsp of water to brush the tops of the biscuits)
DIRECTIONS
Preheat your oven to 375Ëš. Line a rimmed baking sheet with parchment paper and set to the side. *Make sure not to use a flat baking sheet, or you will have a mess at the bottom of your oven!
In a large bowl, mix the flour, *xanthan gum if needed, corn starch, baking powder, salt and 1/2 tsp. garlic powder (we are saving the other half for the top of the biscuits!) and mix well.
Add the grated cheese, shredded/diced butter, or ghee and toss to coat in the flour mixture.
Create a hole in the center of the dry ingredients and add the plain kefir. Mix until combined, making sure not to overmix. If you used already-shredded cheddar cheese, you might need to add another TBS or two of kefir, as already-shredded cheese tends to be drier. Be careful not to add too much more liquid, or the biscuits will leak while cooking (this is why we use a rimmed baking sheet).
Divide the dough into 10 - 12 equal pieces (for my macros, I made 12), and roll each gently into a ball. Gently flatten to about 3/4" thick and place 2" apart from each other.
Place the biscuits in the freezer for 10 minutes until chilled and firm.
Remove the baking sheet from the freezer and with a pastry brush, brush the tops of the biscuits with the remaining 1/2 tsp garlic powder and whipping cream or egg wash mixture. Be sure to coat the tops and sides of the muffins.
Place the baking sheet in the center of the preheated oven and bake until firm to the touch, about 17 to 20 minutes. If you desire a crispier biscuit, cook an additional 2 to 3 minutes.
Remove from the oven and allow to cool for 5 minutes before transferring to a wire rack. Note: there will be some leakage from the butter/ghee, this is totally normal!
Once cooled, store in an air tight container and place in the fridge for up to 5 days, or freeze for up to 6 months.
