Summer has officially arrived! With the warmer temperatures comes the need for cooler meal ideas. I went ahead and turned a normally un-healthy recipe into a cleaner version that you and the whole family will enjoy!
8 oz. Grilled Chicken Breast (Diced) 3/4 Cup of Plain Non-Fat Greek Yogurt 2 Stalks of Chopped Celery 1/2 Cup of Seedless Grapes (Cut in half) 4 Stems of Green Onion (Chopped) 1 Bunch of Cilantro (Chopped) 1 Tbs of Lemon 1/4 tsp Cayenne Pepper 1 tsp Minced Garlic Salt and Pepper to Taste
* For a healthy fat, add avocado!
Cook chicken breast and dice. Chop and mix all the remaining ingredients in a bowl and combine. Add chicken and mix well. You can serve this recipe several ways: For a low-carb version, serve it over lettuce, otherwise serve on a slice or two of Ezekiel bread or a whole-wheat wrap for an amazing sandwich!
