BRINED ORANGE CHIPOTLE CHICKEN & CREAMY AVOCADO SAUCE

Have you ever tried brining your chicken before? If not, you're missing out on an amazing way to cook juicy, tender and flavorful chicken breast! Add in an amazing glaze and sauce and your tastebuds will be screaming with excitement!

This recipe is perfect in tacos, with rice or quinoa or as pictured here, with seasoned sweet potatoes!

STEP 1: BRINE THE CHICKEN

  • Prepare a mixture of 1/4 cup of sea salt and 4 cups of warm water. Mix well and then add your chicken breasts. Soak the chicken in the brine for 30 minutes. Add some even more flavor with added herbs and spices to the brine. Garlic is an amazing addition! Once the chicken has sat in the brine, remove and pat dry to remove excess water.

  • Preheat your oven to 450 degrees.

STEP 2: PREPARE THE ORANGE CHIPOTLE GLAZE

This will be enough for 2 to 3 chicken breasts

INGREDIENTS:

  • 1 TBS Orange Juice

  • 1.5 tsp Balsamic Vinegar

  • 1 tsp Agave

  • 1/2 tsp Spicy Brown Mustard

  • 1.5 tsp Adobo seasoning

DIRECTIONS:

  1. Coat a baking pan very well with non-stick spray

  2. Whisk together all the ingredients and brush the glaze on both sides of the chicken breast

  3. Place in the oven uncovered and cook for 25 minutes at 450 degrees

STEP 3: PREPARE THE CREAMY AVOCADO SAUCE

This recipe is taken from my Clean Eating Recipe eBook

INGREDIENTS:

  • 1 Whole Avocado

  • 1 Clove of Garlic, Minced

  • 1/4 TBS Lime Juice

  • 3 TBS Extra Virgin Olive Oil

  • Pinch of Sea Salt

  • Pinch of Ground Black Pepper

*Optional 1 Fresh Jalapeno (diced and seeds removed)

DIRECTIONS:

  1. Place all ingredients in a food processor, blender or you can even use a hand mixer.

  2. Mix until all ingredients are a creamy texture

  3. Refrigerate leftover sauce. To make into a salad dressing, add in water until it's a dressing consistency.

To make the seasoned sweet potatoes that are pictured, all I simply did was take frozen, diced sweet potatoes and saute them in a pan with olive oil, garlic, salt and pepper until browned on each side and then added a sprinkle of Parmesan cheese when finished cooking.
