AVOCADO IN A TRUFFLE?

It's a healthy fat! No, it's an amazingly rich and dreamy treat! Actually it's both, it's... an avocado truffle!

These babies are not only rich in antioxidants and healthy fats, but they are the perfect 'treat' when you're craving something sweet!

AVOCADO TRUFFLES

Makes 12 servings

INGREDIENTS:

  • 1/2 an avocado

  • 4oz. 60 - 79% cacao chips (I used Ghiradelli)

  • 1/2 tsp sea salt

  • Cocoa powder, sprinkles, unsweetened shredded coconut or any other kind of coating

DIRECTIONS:

  1. Melt the chocolate in a double boiler (Here's a great video to show you what to do), while the chocolate is melting, place the avocado in a food processor or mix very well with a hand mixer until it's smooth and creamy.

  2. Once the chocolate is melted, add in the avocado and sea salt and stir well. It should have a frosting consistency.

  3. Remove the bowl from the boiler and place in the fridge. (Make sure to put a pot holder underneath the bowl as it will still be hot.)

  4. Refrigerate the chocolate for about 30 minutes.

  5. Once the chocolate has hardened enough, using a melon baller, scoop out the mixture and form the truffle balls by rolling between your hands. If the chocolate hasn't hardened enough, stick it back in the fridge for another 20 minutes.

  6. Roll the truffles in either cocoa powder, sprinkles, nuts, chili powder (if you like spice!) or unsweetened shredded coconut.

  7. Store truffles covered in the fridge.
