Add some spice to your life... apple spice protein muffins that is!



Fill your kitchen with the aromatic pleasures of apples, cinnamon, nutmeg and cloves this beautiful Fall weekend with my Apple Spice Protein Muffins!

I recently noticed that my spice cabinet was void of Apple Pie Spice *gasp* and I immediately had to hop online to Amazon and order some FRONTIER CO-OP Organic Apple Pie Spice. I absolutely love there spices! Once my product arrived, I threw on my apron (i.e. cooking cape) and worked like a mad scientist coming up with a fantastic, new, healthy recipe to share! At last, my Apple Spice Protein Muffins were born! What I love about these muffins (aside from the fact that they are super healthy for you!) is that they are so versatile!

Below I am putting just the baseline recipe, however, you can go crazy with the additional options if you'd like such as:

• Adding 1/2 cup of raisins

• Sprinkling the tops with walnuts before baking

• Adding 1 cup of grated carrots

• Subbing 1 cup of Greek yogurt or cottage cheese (more protein) for applesauce

• Topping your muffin with nut butter or Greek yogurt

• Topping your muffin with a healthy frosting (recipe below)

Now let's get to the recipe!

INGREDIENTS:

  • 2 cups of oat flour

  • 2 scoops of vanilla whey protein powder (I used The Firicano Whey Vanilla Protein Powder)

  • 2 TBS Stevia

  • Pinch of sea salt

  • 2 tsp. Apple Pie Spice

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1 apple, diced

  • 4 egg whites

  • 1 cup of unsweetened applesauce

DIRECTIONS:

  1. Pre-heat oven to 350 degrees.

  2. Prepare a muffin pan with either muffin cups or spray the cups with cooking spray, or coconut oil.

  3. Combine all ingredients in a large bowl with a spatula and mix well.

  4. Divide the batter evenly amongst the 12 muffin cups.

  5. Bake for 18 to 20 minutes or until a toothpick comes out clean.

  6. Let cool completely before enjoying!

*Note, these are gluten free, so they will be more dense than regular flour muffins.

If you'd like to add a healthy frosting to add to your muffins:

INGREDIENTS:

  • 2 scoops of vanilla protein powder

  • 1 cups of plain Greek yogurt

  • 1 tsp vanilla

  • Unsweetened Vanilla Almond Milk

DIRECTIONS:

Mix together the protein, Greek yogurt and vanilla. Slowly add 1 TBS at a time of almond milk and mix until you get a thick frosting-like consistency. Place in the fridge for 20 - 30 minutes to thicken up. Frost the muffins before eating or they will get soggy.
