DONUTS. Need I say more?



They say a picture is worth a thousand words... therefore, I really don't have to write some fun little paragraph about why these donuts are amazing, or why you need to make them RIGHT NOW. I mean, come on! Look at them! They are DONUTS!! So with that, I leave you the recipe. Enjoy!

GLUTEN FREE CHOCOLATE PROTEIN DONUTS

Makes approx. 14 donuts

Calories: 113; Protein 6g; Net Carbs 9g; Fat 6g

  • 3/4 cup gluten free flour

  • 3/4 cup almond flour

  • 1/2 cup chocolate protein powder (I used The Firicano Whey - extra chocolatey!)

  • 1/2 teaspoon cinnamon

  • 3 tablespoons unsweetened dark cocoa

  • ½ teaspoon baking soda

  • 1 teaspoon baking powder

  • 3 tablespoons Stevia

  • ¼ cup egg whites

  • 1 tablespoon coconut oil (melted in microwave)

  • 1/2 cup unsweetened vanilla almond milk

Frosting:

  • ¼ cup cacao chips or Enjoy Life Dark Chocolate Chips

  • 2 teaspoons unsweetened vanilla almond or coconut milk

  • ½ teaspoon vanilla extract

DIRECTIONS

  1. Preheat the oven to 325 degrees. Mix the dry ingredients in a medium-sized bowl, once mixed, add the wet ingredients and mix well. If the batter is still too dry, add a little more almond milk.

  2. Scoop the batter into a quart sized ziploc bag, seal it and cut off the tip.

  3. Spray the donut pan with non-stick spray and squeeze the batter into the donut cups, filling about 2/3 of the way.

  4. Once all are filled- shake the pan a little bit to get the batter nice and even in the cups.

  5. Bake the donuts for 10 to 12 minutes- check with a toothpick after 10 minutes. I was able to get 14 donuts out of this recipe. Once the donuts have cooled some, make the frosting.

  6. For the frosting, place the chocolate chips, milk and vanilla in a small bowl, stir and place in the microwave for 20 seconds. Take out and stir well and if it still hasn't melted all the way, heat in 10 second increments- just make sure not to burn the chocolate.

  7. Take each donut and dunk the tops into the chocolate or just drizzle on top. Add sprinkles, nuts, coconut or anything else you'd like and enjoy! Let me know if you try these!
