High Protein Apple Cinnamon Crockpot Oats

Forget those store bought brands! Fill your house with the aroma of apple cinnamon with my protein-packed steel cut oats!


Makes seven 3/4 cup servings.







INGREDIENTS

  • 2 Apples, Diced into Small Pieces

  • 1 1/2 Cups Unsweetened Vanilla Almond or Coconut Milk

  • 1 1/2 Cups of Water

  • 1 Cup Uncooked Steel-Cut Oats

  • 2 Tbs Agave, Honey, Maple Syrup or for a lower calorie/sugar version Monk Fruit Golden Sweetener

  • 1/2 tsp Apple Pie Spice or Ground Cinnamon

  • 1 Tbs Ground Flax Seed

  • 1/4 tsp Salt

  • Higher Protein Option: Add 1-2 Scoops of Vanilla Protein Powder

  • Optional Toppings: raisins or cranberries, slivered almonds or coconut flakes


DIRECTIONS:

  1. Coat the inside of a slow cooker with cooking spray. Add all ingredients, stir, cover and cook on low for approximately 7 hours.

  2. Spoon oatmeal into bowls, add toppings and enjoy! Store leftovers in the refrigerator or freeze. If freezing, coat muffin tins with spray Pam and scoop out the oatmeal into each muffin tin for individual servings and freeze.

To reheat single servings, put 3/4 cup of cooked oatmeal in a microwave proof bowl,

add 1/3 cup of almond milk. Microwave covered for 1 minute, stir, continue cooking for another minute or until hot.
