The Best Gluten Free Banana Chip Protein Bread




Just when you thought my banana chip protein muffin tops from years ago were the G.O.A.T., I have to introduce you to my latest version! This can be made as a bread, muffins or muffin tops... you'd just have to play around with the cooking times (I'd suggest 20-25 min. for muffins or muffin tops). Whoever said that gluten free baked goods didn't taste that good, never tried this recipe before! And I promise you, this bread tastes better than anything you could buy in a bakery! I can't wait for you to try it!

INGREDIENTS:

Dry:

  • 1 cup gluten free all purpose flour (I used King Arthur Measure for Measure)

  • 1 cup blanched almond flour

  • 1/2 cup vanilla protein powder (I used Thorne, message me for a discount on all Thorne products!)

  • 3 tsp. baking powder

  • 1 tsp. cinnamon

  • Pinch of salt (I love Redmond Real Sea Salt!)

  • 3/4 cups Enjoy Life Mega Chunks (Optional! You can also add walnuts if you'd like!)


Wet:

  • 3 large ripe bananas, mashed

  • 1/3 cup melted coconut oil

  • 1/2 cup Monk Fruit Sweetener

  • 3 large eggs

  • 1/2 cup greek yogurt

  • 1 tsp vanilla extract


DIRECTIONS:

  1. Preheat your oven to 350Ëš

  2. In a large bowl, combine dry ingredients and set aside.

  3. In a medium bowl, add in wet ingredients and mix well.

  4. Combine the wet ingredients into the dry ingredients and mix until combined. But do no over mix!

  5. Fold in the chocolate chips!

  6. Spray a 9x5 bread loaf pan (if making bread, otherwise spray muffin top pan or muffin tin).

  7. Fill the loaf pan with the batter and shake from side to side to even out the batter. Optional: sprinkle with some coarse sugar crystals on top! I like to do this to add a little sparkle to my baked goods and it helps to keep the top from sticking!

  8. Bake for 60 - 65 minutes or until your toothpick comes out dry!

  9. Let cool for 10 minutes and enjoy!

  10. I recommend storing in the fridge for up to a week or freezer for up to 6 months.
