Making your own homemade granola is SO easy and cost-effective, and the best thing - you can fill it with healthy ingredients that you and your family love! You can also eat this straight from the bag (make sure to portion control!) or added to almond milk for a cereal!
Ingredients • 3 cups of old-fashioned rolled oats • 2/3 cup of Vanilla Firicano Whey Protein Powder • 1.5 tsp Pumpkin Pie Spice • 1 tsp cinnamon • 1/2 cup raw almonds • 1/3 cup raw shelled pumpkin seeds • 1/2 cup of pumpkin puree (not pie filling) • 1/3 cup of honey, agave or maple syrup • 3 TBS coconut oil • 2 TBS water • 2 tsp vanilla extract • 1/2 cup of unsweetened flaked coconut • 1/2 cup of raisins or dried apples
Preheat oven to 325F. Line a large baking sheet with parchment paper.
Place oats, almonds, pumpkin pie spice, cinnamon and pumpkin seeds in a large bowl; mix together.
Place the coconut oil, honey, pumpkin, water and protein powder in a medium saucepan.
Turn heat to medium and whisk until mixture is smooth, thick and creamy and just beginning to bubble.
Remove saucepan from heat and whisk in vanilla.
Pour mixture into the dry ingredient bowl, stirring to combine and coat.
Pour mixture out evenly on baking sheet lined with parchment paper.
Bake in preheated oven for approximately 45 minutes, stirring once or twice.
If granola still seems moist, keep baking in 5 minute increments until dry.
Remove from oven and let cool completely on sheet. Crumble up in bowl and stir in coconut and dried apples or raisins.
Store cooled granola in an airtight container for up to 2 weeks, or freeze for up to 2 months.
