DID SOMEBODY SAY BROWNIES?!

Who says you can't have your brownie and eat it too? For all my chocolate lovers out there, I know that this is music to your ears! If getting back on track with your health and fitness has left you longing for a kitchen filled with the sweet smells of chocolate-fudgey-goodness, I am hear to tell you that you CAN have that aromatic pleasure back again with my Black Bean Protein Brownies!

If you're like me, the words black beans and brownies just don't seem to jive... in fact, it kind of makes you a little nauseated at the thought of black beans in any kind of dessert, but guess what? That is no longer the case! These brownies will send your taste buds into a swirling delight of choco-heaven and you wouldn't even know they were made from a legume! Better yet, your kids won't even know they aren't eating beans! Now how awesome is that?!

Okay, okay... enough talk about how amazing these are- let's get down to the important stuff, like how to make these bad boys!

BLACK BEAN PROTEIN BROWNIES

Makes 8 Servings. Calories: 155; Protein: 11g; Carbs: 17g; Fat: 9g; Fiber: 5g; Sugar: 5g

INGREDIENTS

  • 15oz. Can of Black Beans, Rinsed and drained thouroughly

  • ½ Cup Chocolate Protein Powder (I used The Firicano Whey Chocolate Protein Powder)

  • ¼ Cup of Dark Chocolate Cocoa Powder

  • ¼ Cup of Melted Coconut Oil (place in the microwave for 20 sec.)

  • ¼ Cup of Cane Sugar (Turbindo) or 1/3 cup of Honey or Maple Syrup

  • 1 tsp Vanilla Extract

  • 1/2 tsp Baking Powder

  • Pinch of Salt

  • 1/2 Cup of Enjoy Life Dark Chocolate Chips (Dairy free)

DIRECTIONS

  • Preheat oven to 350 degrees and grease a 8x8 baking pan.

  • Drain and rinse black beans thoroughly.

  • Combine black beans, protein powder, cocoa powder, coconut oil, sugar, vanilla & salt and baking powder in a food processor.

  • Process until the batter is completely smooth. If you're using sugar, add 1 to 2 TBS of warm water. If you're using honey or maple syrup there is no need to add water.

  • Stir in chocolate chips.

  • Spoon mixture into greased 8×8 pan and smooth mixture down with a spatula.

  • Bake for about 20 - 25 minutes or until just set in the center.

  • Let cool for an hour.

  • For easier slicing, place the brownies in the refrigerator for a few hours.

*You may add in other add-ins such as nuts, coconut (as pictured), raisins, cranberries or top with nut butter
