Pumpkin Spice and Everything Nice!

Just in time for fall, Grain-Free Pumpkin Spice Protein Muffins!

Start your mornings off with a healthy dose of pumpkin goodness! Instead of conquering that pumpkin craving with a high-calorie drink from your favorite coffee shop, pop one of these babies in to your toaster for a treat that's not only good for you, but that will send your taste buds in a fall frenzy!

Grain-Free Pumpkin Spice Protein Muffins

Makes 12 servings


1 Cup of Almond Flour or Oat Flour (this option will not be grain-free)

1 Can of Raw Pumpkin (not pie filling!)

1 Cup of Liquid Egg Whites

2 Scoops of Vanilla Protein Powder

1 TBS Baking Powder

1 TBS Pumpkin Pie Spice (Here's what I use: Pumpkin Spice)

1 tsp Cinnamon

Optional: Dark Chocolate Chips, chopped walnuts, pecans


Preheat oven to 350 degrees.

Spray muffin top pan (here is what I use: Muffin Top Pan) with cooking spray.

Evenly scoop out batter in to muffin tins.

Bake for 15 min., if you're using a cupcake pan you will need to cook for longer.
